If I could eat pasta every single day of the week for the rest of my life, I would. In fact, I’m pretty sure I’ve tried.
That undying love for the deliciously doughy and soul-satisfying noodle is the exact reason I wanted my first non-smoothie recipe collection to be all about pasta.
In my single lady days, I was known to eat pasta for lunch and dinner for the better part of a week. It was cheap and easy, fitting nicely into my grad student lifestyle. Now that I’m a bona-fide adult, cooking for a husband and toddler, I’ve had to use my noodle (ha!) to expand my horizons and make something other than spaghetti and tomato sauce each week.
While I will always love my s’ghetti—it’s comfort food at it’s finest—I am equally as excited about these deliciously simple and hella satisfying pasta dishes.
