Pear-Blueberry Smoothie

I had the amazing opportunity to be interviewed by the loverly Michelle Wright (all the way on the right) from WTAE. We talked about the Project: Food Budget challenge that started last year and lessons learned from the journey.

I also got to meet two of  my favorite P:FB champs, Jennifer and Julie. You’ll get to meet them too. Since they are part of the interview. I know, it’s beyond exciting.

Part of the segment will show me making a delicious, healthy, and budget friendly recipe. A pear-blueberry smoothie, for example. (Look Ma, I’m having fun.)

This recipe was a big hit. Five out of five people loved it. And were shocked (really) that there was a green invader in it. Good texture. Good flavor. Pretty glasses. It’s a winning combination.

Save Recipe

Ingredients

  • 1 frozen banana
  • 1 pear, sliced
  • 1/3 cup blueberries
  • 1/3 cup green grapes
  • handful of spinach (as much as you can tolerate)
  • 1/4-1/3 cup almond milk

Directions

  1. Throw all ingredients in the blender.
  2. Puree, liquify, and pulverize that stuff.
  3. Pour into a glass (or five) and sip away.

Nightshade free, dairy free, wheat free, gluten free, corn free, soy free, and egg free.

    we are just starting to enjoy green smoothies after purchasing a vitamix – thought i’d mention though that veggies in the cruciferous family, including spinach and kale, shouldn’t be eaten much raw because they will suppress thyroid function. cooked, they’re great!

    we have been enjoying watercress a lot in our green smoothies. flavor is much milder than spinach or kale, too.

      i would love to know where you learned that about the cruciferous veggies. everything i have read {and been taught} has talked about the benefits of eating dark leafy greens, particularly juicing them and using them in smoothies for the good enzymes.

        hi emily,

        if you google something like — cruciferous vegetables thyroid — you should come up with a lot of information. basically they may interfere with thyroid hormone synthesis and/or compete for iodine uptake by the thyroid. there is some debate on the details but –

        i will say that from my understanding, consumption of raw cruciferous is unlikely to result in full-on hypothyroidism unless eaten in large quantities, or when accompanied by an iodine deficiency or pre-existing thyroid problem.

        on the other hand, most people won’t be aware of borderline hypothyroidism that isn’t yet causing symptoms. many people with iodine deficiencies also aren’t aware of that either.

        i do know of a woman who was taking medication for hypothyroidism for a very long time, when a well-known veterinary thyroid researcher pointed this fact out to her. she had been juicing kale every morning in her vitamix for 20 years. once she stopped, she was able to get off the thyroid meds.

        that said, i like raw kale and spinach! and certainly in small quantities i don’t think it makes much difference unless you have a major thyroid problem i will still eat raw spinach salads, and i love to use raw kale as a “wrapper” for raw burritos etc. i just consider that a special thing and try to eat it more often cooked, and make a concerted effort to use non-cruciferous greens when i want raw greens. as i said, i love watercress, and parsley and lettuces in my fruit smoothies. arugula and pear is great!

        thanks for such a great website – i’m a long-term vegetarian, recently dairy-free and trying to cut down on gluten so these recipes are a great resource for me!
