5 Awesome Oat Recipes

It’s no secret that I’ve been obsessed with oats for a while. It started harmlessly with refrigerator oats and then morphed into baked oatmeal. Now, we’re sort of at an oat free-for-all with stovetop oats getting in on the fun.

I’m totally blaming The Oatmeal Artist for this. It’s all HER fault.

Here are a few oat recipes that have been tickling my fancy and piquing my interest lately.

  1. The Ultimate Guide to Oatmeal via The Kitchn
    This is the mother of all oatmeal posts. I was blown away by the amount of information in here, including cooking times, texture issues, and the differences between rolled, quick cooking, and steel cut oats. A great primer for anyone looking to dip their toes in the oatmeal water.
  2. Making Oatmeal in a Rice Cooker via The Kitchn
    I clearly went down the oatmeal rabbit hole when reading the ultimate guide above. I stopped at this article because anything that allows me to walk away and do something else while it’s cooking is a winner in my book. And I’m a huge fan of rice cookers in general, so this just seemed like a total win.
  3. Pear and Almond Baked Oatmeal via The Oatmeal Artist
    No oatmeal list would be complete without at least ONE recipe from The Oatmeal Artist. I probably could have chosen a few hundred (she seriously has that many recipes), but this one seemed very cold-weather appropriate.
  4. Overnight Chai Steel Cut Oats via This Homemade Life
    Even though I initially thought this recipe was for CHIA oats and not chai oats… And even though the commenters say that the ratio of oats to water is off… it sounds divine. I may swap out the steel cut outs for rolled oats like I’m used to or even just use the spice blend for a cooked oatmeal. Whatever the case, I’m going to try it.
  5. Quinoa Oatmeal via Thug Kitchen
    I’m kind of in love with the idea of quinoa mixed in with the oatmeal. I’m also a sucker for fresh strawberries in just about anything. So, yeah. I’m totally making this next. Though may have to opt for a different fruit topping as strawberries aren’t exactly in season at the mo.

Things I’ve Been Enjoying: The Stir-fry Edition

Delicious looking stir-fries from around the net.

There is something about this time of year that makes me want to eat stir-fries every day of the week.

Perhaps it’s the impending darkness at 4PM. Or perhaps it has to do with the fact that I want nothing to do with a long and laborious dinner after a full day of baby-wrangling and working. Cooking seems to be the last thing on my mind. Good thing stir-fries are super easy to pull together.

They are also great for cleaning out the fridge of whatever veggies you have leftover. Or so I’ve heard… you know… because that never happens around here or anything.

Here are a few that I’ve tried, and a few more that I will be trying in the week to come.

  1. Beef Lo Mein via Moms Dish
    This one is on the menu this week and I’m kind of jazzed about it. It looks super fresh, super tasty, and super easy to whip together. A definite winning combination around here. I even got some baby zucchini’s from the store that are going to be DEEE-VINE.
  2. Fried Rice via Give Me Some Oven
    I’ve made this one a few times lately and have to say that it’s pretty darn awesome. According to The Hubster, it’s also the closest thing to restaurant fried rice that I’ve ever made. Feel free to add whatever protein you want in here—chicken, shrimp, beef, tofu—it all works well.
  3. Chicken and Asparagus Lemon Stir Fry via Skinny Taste
    I’ve had this one pinned for ages and have yet to make it. Likely because The Hubster doesn’t eat chicken and I’m not thrilled at the prospect of making a dish just for myself. It’s not like this is ridiculously complicated or anything. I just have a block when it comes to cooking for myself. I know. I’m weird. If you’re not a fan of chicken either, this would probably be yummy with shrimp.
  4. Winter Vegetable Stir Fry via Thug Kitchen
    I fucking want to have this right now. (Sorry, I always get inspired to curse after reading their site.) I have even gone so far as to buy all of the vegetables to whip this up, only to realize that I didn’t have the noodle. Dammit.
  5. Spicy Sriracha Shrimp and Zucchini Lo Mein via Baker By Nature
    Y’all know I’m currently obsessed with sriracha, right? That means a list of stir fries would be utterly incomplete without a sriracha inspired dish. And this one? Is so on the menu. I can’t wait to sample this spicy treat. Though, I will be omitting the shrimp and opting for a vegetarian version. Because that’s just how I roll.

Things I’ve Been Enjoying: The Truffle Edition

5 Delicious Truffle Recipes

As a kid who spent a good chunk of her formative years in Ohio, we honed our buckeye making skills verrrry early on. Pretty sure it was a staple in every child’s Home Ec. class starting in 2nd grade.

In any case, I’ve always had a soft spot for decadent balls of chocolatey awesomeness. Avoiding dairy made it somewhat impossible to indulge. And then, vegan baking took the world by storm and solved every single problem I’d ever had and then some.

The results? Some of the most delicious flavor combinations on the planet. I would like to try my hand (and devour) each and every one of these. Yes, including the ones that have chickpeas and avocado in them. Yep. I totally know I’m weird.

After I finish round two of the pumpkin truffles (round 1 was kind of a delicious mistake), I’m working my way through these:

  1. Homemade Vegan Rolos via Fork and Beans
    I loved Rolos as a kid. Loved. So it’s no surprise that these bad boys caught my eye first. I’m also super excited to try my hand at the vegan caramel recipe, as I’ve had a bit of a love-hate relationship with it in the past (i.e.—it never works).
  2. Avocado Chocolate Truffles via Honey & Fig
    This sounds like little balls of chocamole. Which, HELLO. Sounds amazing. I think they would be fantastic rolled in chocolate sprinkles (or jimmies) like the picture shows. I also think they would be even more fantastic dipped in chocolate. Because chocolate.
  3. Salted Caramel Peanut Butter Truffles via Minimalist Baker
    Salted caramel, peanut butter, and chocolate? Shut. The. Front. Door. I seriously want to run to the store and buy dates just so I can make these now. I don’t care if The Babe is napping (or not). These are a definite must make.
  4. Flourless Cookie Dough Truffles via My Whole Food Life
    Cookie dough is a welcomed treat in my world, particularly when said cookie dough is dairy free. I also think that because this one contains chickpeas, it should be considered a health food, and therefor does not carry any guilt with eating them. Just saying.
  5. Vegan Peanut Butter Pretzel Truffles via Minimalist Baker
    So, uh. Remember when I was flipping out about the salted caramel peanut butter truffles (also by Minimalist Baker)? Yeah…I hadn’t discovered these yet. This seriously sounds like my idea of heaven in food form. I am confident that goosebumps will appear on my arms after that first bite. I am also confident that I will never ever share these with anyone.

Things I’ve Been Enjoying: The Sriracha Edition

4 Recipes featuring sriracha

Because I couldn’t just leave well enough alone, I figured I would share some of my must-make sriracha themed recipes.

I would have added the sriracha burgers to the list, but I figured that would be overkill.

  1. Honey Lime Sriracha Glazed Cauliflower Wings via Cupcakes & Kale Chips
    I feel a little weird admitting that I’m finally starting to like cauliflower. The first recipe that had me saying “I guess it’s okay.” was Buffalo Falafel from Thug Kitchen. Since then, I’ve been adding it to fried rice religiously. And now? I have found at least two recipes that have featured cauliflower pretty prominently. OY.
  2. Sriracha Roasted Chickpeas via French Press
    I have sat back on the sidelines and watched as the food blogging world has talked about roasted chickpeas. I’m not sure why I haven’t delved in feet first, as I love chickpeas. Maybe I just never found a flavor combination that tickled my fancy? In any case, these roasted chickpeas are tickling my fancy. And will be on the menu soon.
  3. Homemade Chili Sriracha Hot Sauce via White on Rice Couple
    I’m always curious how things are made, and this recipe for homemade Sriracha looks super easy and tasty. It also allows for customization and adjustment of heat levels. Which, if you’re anything like The Hubster and I (heat wimps after not eating it for 5 years), then this recipe is for you!
  4. Honey Sriracha Roasted Brussels Sprouts via Shared Appetite
    This one is for The Hubster. He’s a huge brussels sprouts fan. I may be inclined to the like them, or at the very least tolerate them with a sauce like this. (Hmm. I may have to rethink my vegetable choices after this week’s list.)

Things I’ve Been Enjoying (And Eating)

Pinteresting Recipes

The past few weeks have seen a smattering of new recipes showing up on the menu. I have to say, they have all been quite delicious, making me even more excited to go down the rabbit hole that is Pinterest.

The Hubster has even been getting in on the recipe hunting fun, and is the reason that Buffalo Falafel are in my life. It’s a good thing we’re already married, because that’s the sort of thing that would make me want to marry him on the spot.

We’ve made 3 out of the 5 recipes on this list, so can honestly say that they are delicious. The other two are on the menu for this week. Y-U-M.

  1. Vegetable Pakoras via Easy Indian Recipes
    I’ve always had a love-hate relationship with Indian food. I’ve often found the spices to be a bit full on for me, or the things I would enjoy are made with yogurt. I’m not really sure why I suddenly wanted these, but alas, I did. And holy crap were they good. Since that inaugural attempt, we’ve had them several times since, and adding in different veggie combinations for a bit of fun.
  2. Buffalo Falafel via Thug Kitchen
    I’m pretty sure y’all are going to revoke my foodie card when I admit this, but this is the first recipe I’ve made from Thug Kitchen. I mean, I’ve known about them and followed them for yearssss, but never wanted to make anything. What the fuck is wrong with me (sorry, channeling my inner Thug)?! I seriously think this is my favorite food on the planet right now. I didn’t want to stop eating them. Do yourself a favor and make them, pronto. (For my nightshade sensitive friends, I am SO SORRY.)
  3. Thai Beef, Vegetable, and Basil Stir-Fry via Fuss Free Cooking
    The Hubster has been on a Thai Beef kick as of late. The first variation we tried was with ground beef. It was good, just not a huge fan of the whole ground beef texture with the flavors. So we went on the hunt for a different recipe, and found this one. If you’re into beef, this is delicious. I’m sure it would be equally as tasty with chicken.  Or tempeh, if you’re into that kind of thing.
  4. Sriracha Ramen Noodle Soup via Baker by Nature
    We’ve been on a sriracha kick since our initial foray into Thai Beef. I’m pretty sure I was just about to try sriracha when I was first diagnosed with a nightshade sensitivity. Five years later, I got to try it for the first time. Now, I want to cook it in everything. This ramen noodle soup was no exception. Can’t wait to try this one out!
  5. Apple Pie Bread via Pip & Ebby
    And because no Pinterest exploration is complete without at least one dessert tickling your fancy, I had to include this apple pie bread. Looks delicious, right?
