I Baked!!

Now, this might not sound that exciting to most people, but when you are forced to bake without dairy, soy or wheat it becomes a little difficult. And that’s putting it nicely.

I got the recipe over at Aprovechar and made some tweaks of my own. I believe it originally came from a cookbook called Sophie-Safe Cooking, and was then tweaked by Sally.

Here’s what I did differently:

  1. We didn’t have oranges in the house, but we had an over abundance of clementines. Which one person cannot possibly eat alone [The Hubster doesn't do citrus without provocation]. So I used 3/4 cup of freshly squeezed clementine juice [about 5] plus rind of one instead of the oranges.
  2. I forgot to grab frozen cranberries when I was at the store. They didn’t have any fresh ones at WholeFoods. I did, however, have Craisins in the cabinet. So I used those.

I was pretty happy with how they turned out, and even happier that I have some options for breakfast that don’t include eggs.
