Another casualty of the nightshade intolerance is salsa.
I didn’t really learn to appreciate the sweet and spicy goodness that was salsa until a few years back. I was, as they say, a purist when it came to tortilla chips. And then one day, everything change. And I began to enjoy it.
And then, we found Mrs. Renfro’s Peach Salsa. And I loved it.
A week and a half ago, I found out I couldn’t eat nightshades anymore. And there went the salsa. Until yesterday. I decided to try my hand at a nightshade free salsa! I know. I’m getting brave. We used it on top of the lentil burgers and it was delish.
Nightshade Free Peach Mango Salsa
- 1 ripe mango, peeled and chopped
- 1 ripe peach, chopped
- 1/2 red onion, chopped
- 2-3 cloves garlic, minced
- 1-2 tbs lime juice or juice of 1 lime
Combine all ingredients in a bowl. Mix. Enjoy!
