I would like to preface this by saying a.) this is so good you’re going to kick yourself for not trying this sooner and b.) it kind of doesn’t qualify as a recipe because it is way too simple.
It does however, make for gorgeous pictures and a much needed break from posting about nectarines.
So, there’s that.
I was talking to My Mama last week and she was raving about how good watermelon has been and told me that I had to go out and get some so we could enjoy it together.
Who am I to argue with that kind of logic?
So, off I went to the store. Found the heaviest, most hollow sounding watermelon I could carry and brought it home. And MAN was she right.
Watermelon is like a right of passage. Summer is not officially summer until you eat copious amounts of watermelon.
So, goodbye nectarine obsession and hello watermelon obsession.
Only problem is, The Hubster prefers having something besides watermelon for dinner. Harumph.
Strawberry + Watermelon Smoothie
- 1 cup seedless watermelon chunks
- 6 strawberries hulled
Combine strawberries and watermelon into a blender or Vitamix.
Puree until liquid.
Pour into a glass.
Go back and do it again.
