
I have been craving some black beans and sweet potatoes. But not necessarily in the same meal. When I found a recipe that called for both, I was pumped.
Of course, having some pretty lengthy food intolerances {white potatoes, tomatoes, eggplant, peppers, cinnamon, dairy, msg}, I had to tweak the recipe for my needs. I also like to play around so added a few additional spices. I know. I’m wild and crazy.
Sweet Potato and Black Bean Hash
Ingredients:
- 1/4 – 1/2 cup red wine
- 1 large onions, chopped
- 1 large sweet potato, peeled and cubed
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tbs oregano
- 1 tsp ground orange peel or zest of orange
- 1/2 tsp kosher salt
- 1 cup frozen corn
- 1 15oz can black beans, drained and rinsed
- 1 cup (or more) vegetable broth
Directions:
- In large skillet, preferably cast-iron, heat red wine over medium heat. Add onions and cook, stirring often, until softened, about 5 minutes.
- Add sweet potato and cook, stirring often, until beginning to brown in spots, about 3 minutes.
- Stir in garlic, cumin, orange peel, and salt. Cook, stirring often, 30 seconds.
- Add 3/4 cup vegetable broth and cook, stirring to scrape any browned bits from bottom of pan, until sweet potatoes are tender, about 5 minutes.
- Stir in corn and beans and cook, stirring occasionally, until heated through.
- Season with kosher salt and freshly ground pepper to taste and serve hot.
Notes:
- If you need to add more liquid to help soften the potatoes, add away. It took a little extra liquid, specifically the wine. We started with the original 2 tbs and then added more to increase the flavor.
- If you are a big cumin fan, you can add more. The orginal recipe called for 4 (!) tsp of cumin. I can handle 1 at most. So we added less.
- If you can eat nightshades, specifically peppers, feel free to add a little heat with jalepeno peppers or cayenne pepper.
