White Bean and Spinach Burger

The first time I made this recipe {maybe a year ago} and it sort of fell flat. As in bland and boring. So, I tried to something totally new. It was much better. Had great punches of flavor.

Our only complaint: it was a little dry. Still thinking about what kind of sauce to put on top since I can’t do anything like a tomato. The Hubster, on the other hand, enjoyed a thick slice. Might try a balsamic something-or-other. Any suggestions would be very welcome!

White Bean and Spinach Burger

Cook Time 10 minutes
Total Time 20 minutes
Servings 4 -6


  • 1/2 cup ground rolled oats
  • 1 15 oz can white beans or great northern beans
  • 1-2 cloves garlic minced
  • 1/4 cup ground flax meal
  • 2 tbs rice milk or water
  • 2 large handfuls wilted spinach
  • 1 tsp dill
  • kosher salt
  • ground pepper


  1. Ground rolled oats in blender into fine powder.
  2. Mash white beans and add remaining ingredients together in a large bowl.
  3. Form into patties and cook over medium-high heat, lightly browning on each side.
  4. Serve on bun of your choice and enjoy!
